Tomatoe Soup May 19 2015

Serves 6

Ingredients:

3 tbsp olive oil
1/3 cup rice wine (mirin)
3-6 cloves garlic, minced
8 cups tomato juice or undrained canned tomatoes pureed
freshly grated parmesan cheese
croutons
1 tbsp sweet paprika
fresh parsley, chopped
Method:
  1. Saute the garlic in the oil, do not brown.
  2. Stir in paprika & saute for 1 min, continuously stirring.
  3. Stir in tomato juice & heat.
  4. Add rice wine & simmer for 5 -10 mins.
  5. Garnish with croutons, cheese & parsley.
